OH, Forks!™ Cajun Chicken Vegetable Noodle Primavera

So many things are “cajun” in our house! This recipe was one of our firsts when going “gluten free!” You can easily “edit” it to include other veggies, and add more (or less) spice to your liking!


Ingredients

  • 8 Teaspoons
    Weber Gluten Free N'Orleans Cajun Seasoning
  • large bonesless, skinless organic chicken breasts
  • 1
    large tomato
  • 1
    medium onion, chopped (choose your variety)
  • 5
    cloves of garlic, pressed (more or less is okay, to taste)
  • 16 Ounces
    Mushrooms, sliced (your choice on type)
  • 1
    Yellow Squash, diced
  • 12 Ounces
    Peas, dethawed
  • 1
    head of broccoli, tops only (no long stems)
  • 16 Ounces
    Gluten Free Spaghetti or OH, Forks!™ Spaghetti, cooked per package directions
  • 32 Ounces
    Gluten Free Alfredo Sauce or OH, Forks!™ Parm Cheese Sauce
  • 4 Tablespoons
    Olive or Avocado Oil

Instructions

  1. Step 1: Rub cajun seasoning on each chicken breast, coating both sides. Place breasts in large hot skillet with oil. Cook over medium-high heat until completely cooked. Chicken should be white all the way through. Remove chicken from pan, and set aside. Use same pan for step 2.

    Step 2: Add onion, garlic, and mushrooms. Cook until onions are tender and clear, and mushrooms are dark. Then add squash, broccoli, peas and tomato to the pan, cooking until broccoli turns bright green.

    Step 3: Add chicken, now diced, back to vegetable mixture and add sauce. Let simmer for 20 to 30 minutes. Chicken and vegetables can be mixed with noodles as a casserole, or topped on the noodles.
