OH, Forks!™ Pasta Primavera

Pasta Primaveras main focus is asparagus! It’s delicious, and a quick dinner when you’re out of ideas, and all the veggies are still sitting on the counter, or in the drawer…waiting for you to make your move! Try this yummy dish tonight!


Ingredients

  • 1 Cup
    cashew milk
  • 2
    cloves of garlic, pressed
  • 3/4 Cups
    OH, Forks!™ Chicken Bone Broth
  • 2 Tablespoons
    OH, Forks!™ Gluten Free Flour Mix
  • 2 Tablespoons
    ghee
  • 1 Pound
    asparagus, cut into 1 1/2 inch pieces
  • 3/4 Pounds
    Mushrooms, sliced
  • 1
    Zucchini, sliced
  • 2 Teaspoons
    dried basil
  • 1 Pound
    Gluten Free Spaghetti or OH, Forks!™ Spaghetti, cooked per package directions
  • 8 Ounces
    Shredded Parmesan and Romano Cheese (to remain dairy free; use faux cheese)

Instructions

  1. Step 1: In large skillet, cook onion and garlic in ghee over medium-high heat until onion is see-through.

    Step 2: Add in asparagus, zucchini and mushrooms. Cook, stirring constantly, for five minutes.

    Step 3: Turn heat to high, and add cashew milk, broth, and flour; stirring constantly. Add in basil. Allow mixture to bubble, but not fully boil. Keep stirring. Mixture will begin to thicken, and you can then reduce heat to low.

    Step 4: In serving bowl, combine cooked pasta and vegetable mixture. Top with Parmesan and Romano cheeses, if desired, and enjoy!
