OH, Forks!™ Frito Pie

This gluten free & vegan Frito pie lasted for only an hour in our dinner kitchen! It’s simple to make this dish with or without meat & dairy- but we opted for the gluten free & vegan version. It’s crazy simple for kids to make, too! This New Mexico state pie is also heavily loved in Texas, but first began in Santa Fe. Many say that this original helped to create the 1960s up-and-coming favorite, “Walking Tacos-” which were also known as, “New Mexico in a Bag” back in the day. Enjoy!

If you have a “thing” for fresh summer tomatoes & sweet Vidalia onions, you should try this New Jersey “state” pie! I LOVE tomatoes & onions- even though I cannot eat them in the mass quantities I used to. Our gardens are overflowing with rainbow Swiss chard! Our rabbits love the stuff, but I hadn’t yet found a simple recipe to use it in that everyone loved. Until just a few days ago! Best part about this potato recipe is that you can use ANY potato and it remains delicious! Give this simple side dish a try and pack in the greens in a very hidden way!

Have you tried the “cloud bread” recipes for “keto” “bread” around the inter-webs? Honestly, it really doesn’t do it for us. It’s a very loose take on “bread,” with a very egg-like texture. That said, we get a lot of questions and requests for it! Some people love using this loaf as bread, and others use it as an omelet, perfect for slicing for breakfast bagels or sandwiches. However you choose to use it, it is an interesting recipe! Give it a try for yourself!
