OH, Forks!™ GF Sunshine Skillet

The “Sunshine Skillet” was named by my son years ago. He said it always made his mornings bright, and gave his brain lots of POWER! It also works well for those eating clean, and avoiding processed foods and dairy!


Ingredients

  • 12
    Large Organic Eggs OR Equal Amounts of Egg Substitute
  • 16 Ounces
    Organic Sausage; we prefer the spicy variety
  • 1
    Bell Pepper, any color
  • 6 Ounces
    Gluten Free Turkey Breast or Chicken Deli Meat, Organic, Preservative Free; chopped and then minced fine
  • 16 Ounces
    Simply Potatoes or Natural Hash Browns of your choice
  • 16 Ounces
    Organic Cheddar Cheese, shredded; OR Faux Cheddar, shredded
  • 1 Pinch
    salt and black pepper
  • 2 Teaspoons
    Avocado oil

Instructions

  1. Beat eggs and add in chopped & minced deli meat and minced bell pepper. Mix well. Cook as you normally would make scrambled eggs until done, and set aside.

    In separate pan, add sausage, and cook through, breaking into small pieces as you go.

    Once sausage is done, set aside and add a small amount of avocado oil into the pan. Add in Simply Potatoes or hash brown/shredded potato choice. (If avoiding white potatoes, sweet potatoes work well for this, too!) Brown to your desired liking.

  2. To Plate as a Sunshine Skillet: Place circle of hash browns in center of plate, followed by a sausage circle. Next, make a circle of eggs, and sprinkle cheese on top, if desired.
    Add on any extra sauces or condiments, and have a GREAT morning!
