Cucumber Dill Guacamole

The perfect spin on traditional guacamole! Cool and fresh, these spices and flavors are sure to tickle your taste buds! Great as a dip with veggies!


Ingredients

    ripe avocado, peeled, seeded, diced
  • 1
    lime
  • 1
    Red Onion, small, chopped
  • 1
    seedless cucumber, small, diced fine
  • 1
    jalapeno pepper, large, chopped fine
  • 1/4 Cup
    fresh dill, chopped
  • 1 1/2 Teaspoon
    ground cumin
  • 1 Pinch
    sea salt
  • 1
    garlic clove, minced
  • Gluten Free Tortilla Chips or Veggies

Instructions

  1. Simple Directions!

    1. Peel, remove pit, and chop. Add into medium mixing bowl, with juice from the lime (roughly 1 1/2 TBSP of juice). Mash together until well mixed, and chunks have been smashed. (Unless you prefer chunky, then don't mash as much.)

    2. Dice onion and cucumber into small, bite size pieces, and add to bowl.

    3. Wearing rubber gloves, or paying attention not to touch your face or eyes, seed the jalapeno by removing the top, and sliding your paring knife around the inside of the pepper, loosening the seed pods. Chop jalapeno into tiny pieces, and add to bowl.

    4. Gently stir in spices, mix and EAT! Or chill, if you'd like to colder. Serve with chips, veggies, or whatever else you'd like! Stores well in an air-tight container in the refrigerator for up to a week! But, it won't last that long...
