Ingredients

  • 4
    medium to large Salmon Fillets
  • salt and pepper, to taste
  • Some
    Olive or Avocado Oil
  • 1
    Large Shallot, chopped fine
  • 3 Tablespoons
    Dry Champagne
  • 1
    Vanilla Bean
  • 3/4 Cups
    Almond Milk
  • 2 Tablespoons
    parsley, chopped

Instructions

  1. Heat nonstick pan over medium-high heat.

Season salmon fillets with salt and pepper.

Add oil to pan, add fish.

Cook 3 minutes on each side; 5 to 7 minutes for well done.

Transfer to serving plate and cover to keep warm.

In same pan, add 1 teaspoon of oil all around pan.

Add shallots, and cook 2 minutes.

Add champagne, and cook to reduce liquid amount by half.

Split vanilla bean, and scrape seeds into champagne.

Add almond milk, and reduce heat to low.

    Simmer 5 to 10 minutes.

Spoon desired amount of sauce over fish, and enjoy!

This salmon is best on a bed of greens, or a pile of gluten free rice!
