OH, Forks!™ Shrimp & Rice Bowls

In our house, we love all things Mexican and spicy. These shrimp and rice bowls are fast, easy and delicious! Best part is that they are quite customizable! You could add black beans, more or less spice, and more of your favorite veggies!


Ingredients

  • 1lb
    shrimp; tails removed, de-veined
  • 6 Ounces
    Jasmine rice, or your favorite gluten free rice
  • 1
    clove of garlic, diced fine
  • 1
    medium to large Green Bell Pepper; de-seeded, sliced into strips
  • 1
    medium onion; we typically use yellow or red; peeled & cut into strips
  • 1 Teaspoon
    OH, Forks!™ Southwest Spicy Spice blend OR your favorite gluten free taco seasoning
  • 1 Teaspoon
    ground black pepper- (or to taste)
  • 1 Teaspoon
    Sunflower oil or your favorite neutral oil
  • 2 Teaspoons
    Vegan Sour Cream or your favorite gluten free sour cream (this is optional)

Instructions

  1. Simple Directions:

    1. Cook rice. In small saucepan, add rice and 1 1/2 cups water, along with a pinch of salt. Bring to a boil. Stir. Cover and reduce heat to low until rice is tender and all water is absorbed. This usually takes 15-17 minutes. Remove from heat, fluff, and set aside.

    2. Prep all other ingredients. Cut veggies into strips. Chop garlic fine.

    3. In skillet, add sunflower oil (or your favorite neutral oil), peppers, onions, and garlic. Cook, stirring regularly, until tender and slightly browned.

    4. Add in 1/4 water and shrimp, along with the taco spices. Cook until shrimp are cooked through (usually 3 to 5 minutes), and season with black pepper, to taste.

    5. Create bowl. Add rice into bottom of bowl, and top with shrimp & veggie mixture.

    If desired, add sour cream to top.
