OH, Forks!™ Rice Noodle Salad

If you like Chinese food, but not necessarily the heaviness, consider this lighter, healthier alternative! This cold noodle dish is sure to please and quench that Chinese craving!


Ingredients

  • 2
    packages Gluten Free Rice Noodles
  • 2
    heads of Romaine lettuce, chopped
  • 3/4 Cups
    green onions, chopped
  • 1/2 Cup
    ghee
  • 8 Ounces
    Oh, Forks!™ Chicken Bone Broth
  • 1/4 Cup
    apple cider vinegar
  • 1/4 Cup
    organic honey
  • 1/2 Cup
    Coconut Oil, melted
  • 1 to 2 Tablespoon
    Gluten Free Soy Sauce

Instructions

  1. Combine lettuce and onions into bowl, and refrigerate to chill.

    Melt ghee in saucepan, and add rice noodles and chicken bone broth; following boiling directions on package.

    In another pan, boil vinegar, honey, oil and soy sauce together for about a minute.

    When ready to eat, toss rice noodles in the sauce, and enjoy!

    **Do NOT mix this before you are ready to eat! The rice noodles get too gummy and mushy!
