OH, Forks!™ Rice Salad with Apples & Nuts

This light salad is surprisingly crunchy and nutty, with a tantalizing flavor!


Ingredients

  • 8 Ounces
    Gluten Free Rice (your choice of style), cooked per package directions
  • 8 Ounces
    Walnuts, coarsely chopped (Cashews are great in this, too!)
  • 1
    stalk of celery, sliced
  • 4
    scallions, thinly sliced
  • 8 Ounces
    raisins
  • 1
    Medium Red Apple; peeled, cored, and diced
  • 1
    lemon peel, grated
  • 3 Tablespoons
    Fresh Lemon Juice (can be squeezed from the lemon that's grated!)
  • 2
    cloves of garlic, pressed
  • 1/4 Teaspoon
    salt
  • 1 Pinch
    black pepper, to taste
  • 1/3 Cup
    Olive or Avocado Oil
  • 1
    head green leaf lettuce of your preference

Instructions

  1. Cook the rice per package directions, cooling until warm.

    Combine the nuts, celery, scallions, raisins, apple, and grated lemon peel in large bowl.

    In a jar or bowl with a fitting lid, mix the lemon juice, garlic, salt, pepper, and olive/avocado oil. Shake extremely fast. Pour half of the mixture on to the apple mixture in the bowl, and toss.

    Combine the rice with the fruit mixture, and top with the rest of the dressing. Let sit for an hour before serving at room temperature, on top of a bed of greens, or chopped lettuce.
