OH, Forks!™ Banana Chocolate Chip Muffins

Who doesn’t love a good, soft & moist muffin? Especially when it’s full of gluten free & vegan goodness!


Ingredients

  • 3 Medium
    Ripe Bananas, peeled, mashed
  • 9 Tablespoons
    Just Egg or the equivalent of 3 eggs with your favorite non-egg item
  • 1/4 Cup
    almond butter OR your favorite nut butter
  • 3 Tablespoons
    Pure Maple Syrup OR honey OR your favorite similar sweetener
  • 2 Cups
    blanched almond flour
  • 3 Teaspoons
    Baking Powder
  • 1/2 Teaspoon
    Sea salt
  • 3/4 Cups
    Walnuts, Pecans or Almonds (your choice), chopped
  • 1 Cup
    Hu Dark Chocolate Chunks, broken into small pieces

Instructions

  1. Simple Directions:

    Preheat oven to 350 degrees.

    1. Mix the first FOUR ingredients together well in a medium mixing bowl. (Mashed bananas, egg substitute, nut butter, maple syrup)

    2. Next, mix in the almond flour, baking powder and salt.

    3. Once mixed, gently fold in the nuts and chocolate chips.

    4. Fill lined muffin tin with baking mix. Filling 3/4-Full will results in approximately 12 large bakery style muffins.

    5. Bake muffins for 10 to 15 minutes (ovens vary). Watch for muffins to be golden browned on their tops.

    6. Remove from oven and allow to fully cool on bakers rack.
