Have you tried the “cloud bread” recipes for “keto” “bread” around the inter-webs?

Honestly, it really doesn’t do it for us. It’s a very loose take on “bread,” with a very egg-like texture. That said, we get a lot of questions and requests for it! Some people love using this loaf as bread, and others use it as an omelet, perfect for slicing for breakfast bagels or sandwiches.

However you choose to use it, it is an interesting recipe! Give it a try for yourself!

Ingredients

  • 8
    large eggs
  • 8 Ounces
cream cheese or dairy free cream cheese
  • 4 Tablespoons
    butter or vegan butter, softened
  • 6 Tablespoons
    coconut flour
  • 1 Tablespoon
    vanilla extract
  • 1 Teaspoon
    aluminum-free baking powder

Instructions

  1. Simple Directions:
    0. Preheat oven to 350 degrees & line your regular sized bread pan with parchment paper.
    1. Mix all ingredients together.
    2. Pour mixture into pan and bake for 45 minutes. If you'd like your egg-loaf to have a golden color, leave it in for a few extra minutes until your desired golden-brown color is found.
    3. Allow to cool completely before attempting to maneuver. Store in refrigerator for up to three days.

To heat: Slice desired thickness of piece, and warm in a skillet using butter or a tad of oil. This also helps to strengthen the slice.
