Who doesn’t love biscuits?! Especially when they can be made easily and gluten free & vegan!


Ingredients

  • 8 Tablespoons
    vegan butter, or regular butter if not vegan
  • 2 1/4 Cups
    OH, Forks!™ gluten free flour blend OR your favorite gluten free bread flour
  • 1/2 Teaspoon
    baking soda
  • 1 Teaspoon
    date sugar or your favorite granulated sugar
  • 2 portions
    Bob's Red Mill Egg Substitute OR your favorite egg substitute (Just Egg works) OR eggs (for non-vegan)
  • 1/3 Cup
    Cashew Milk (with 1/4 teaspoon arrowroot powder added) or Buttermilk
  • EXTRA
    flour for dusting

Instructions

  1. Simple Directions:

    *Preheat oven to 400 degrees.

    1. Cut your butter into cubes, in bowl, and place back in fridge or freezer to keep cold.
    2. In medium bowl, whisk flour, soda and sugar together- ensuring no clumps.
    3. Get butter from fridge, and with fingers, work butter into dry mix. Some chunks of butter remaining is a good thing!
    4. Once mixed, refrigerate for 30 minutes.
    5. Once chilled, add in egg substitute/eggs and "buttermilk" with fork.
    6. Sprinkle countertop or rolling mat with flour. Once almost mixed, turn out on counter.
    7. KEEP DOUGH COLD! Mix with hands- QUICKLY! Cooking spray or oil your hands if needed.
    8. Fold dough on itself to create layers. Do this at least three times, but DO NOT overwork the dough.
    9. Pat dough flat to cut with biscuit cutter.
    10. Put biscuit cuts on sheet, and place back into refrigerator for 30 or more minutes. The colder, the better.
    11. Bake chilled dough for 8 to 12 minutes. Bake until golden brown.

    Serve fresh!
    Or, once completely cooled, store in an air-tight Ziploc or lidded container.
